Mumbai Vegetable Sandwich (Grilled Bombay Sandwich)
Mumbai Vegetable Sandwich (Grilled Bombay Sandwich) is West Indian home cooking, eaten at breakfast. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 6 bread slices
- 1 boiled and sliced potato
- 1 sliced cucumber
- 1 sliced tomato
- 1 small, thinly sliced onion
- 4 tbsp green chutney (mint coriander)
- 3 tbsp butter
- 1/2 tsp chaat masala
- 1/4 tsp salt
How to cook it
- If you do not have leftover boiled potato on hand, cut one potato into small pieces and boil in salted water for about 8 minutes until fork tender, then drain and cool slightly.
- Spread a layer of green chutney over one side of each bread slice.
- Layer the sliced potato, cucumber, tomato, and onion over three of the slices, sprinkling chaat masala and salt as you go.
- Close each sandwich with the remaining bread slices, chutney side down.
- Butter the outside of the sandwiches and grill them on a hot tawa or pan, pressing gently, until both sides are golden and crisp, about 2 to 3 minutes per side.
- Cut into triangles and serve hot with extra chutney on the side.
