Slice three of the onions thin for the base masala, and cut the remaining two into quarters and separate the layers into big petals; these petals go in later, which is what makes a do pyaza a do pyaza.

Heat the oil in a heavy pot and fry the sliced onions with the bay leaf, cinnamon and cardamom until deep golden brown, about 12 minutes.

Add the ginger garlic paste and the mutton and sear 10 minutes over high heat until well browned.

Stir in the chopped tomato, red chili powder, turmeric, coriander powder, cumin and salt, and bhunno 12 minutes until the tomato breaks down completely and the oil separates at the edges.

Whisk in the yogurt off the heat so it does not split, then add the water, cover and simmer 45 minutes, or pressure cook 20 minutes, until the mutton is tender.

Add the reserved onion petals and slit green chilies, cover again, and simmer a final 10 minutes so the onion petals soften but still hold their shape and bite.

Finish with the garam masala and coriander leaves and serve hot.
