Mutton Kofta Curry

How to cook it

Mix the mutton mince with half the grated onion, half the ginger garlic paste, the besan, half the chopped green chilies, half the coriander leaves and a little salt until smooth and slightly sticky.

Shape into 15 to 18 small, tight balls and set aside on a plate.

Heat the oil in a wide pot and fry the remaining sliced onion until deep golden, about 8 minutes, then add the rest of the ginger garlic paste for 1 minute.

Add the pureed tomato, red chili powder, turmeric, coriander powder and cumin, and bhunno 10 minutes until the oil separates cleanly at the edges.

Whisk in the yogurt off the heat so it does not split, then return to a simmer, add the water and slide the koftas in gently without stirring hard.

Cover and simmer 20 minutes, shaking the pot occasionally instead of stirring so the koftas hold together, until they are cooked through and the gravy has thickened. Finish with garam masala, the remaining green chilies and coriander leaves.
