How to cook it
-
Ask the fish seller to clean the pomfret and cut it into thick slices, or leave it whole and score it with 3 deep cuts on each side so the masala gets in.
-
Mix the ginger garlic paste, turmeric, both chili powders, lemon juice and salt into a thick paste and rub it well into the fish, inside the cuts too. Leave it 15 minutes.
-
Mix the rava and rice flour on a plate and press each piece of fish into it on both sides so it is evenly coated.
-
Heat the oil in a wide, heavy pan on medium heat and lay the fish in it. Fry 4 minutes without moving it, until the crust is deep golden and crisp, then turn it carefully and fry 3 to 4 minutes more until the flesh flakes at the bone.
-
Drain it briefly and eat it hot with varan bhaat or fish curry and rice, and a squeeze of lemon. In many Mumbai homes this is the Sunday fish.
