How to cook it

  1. Heat the oil in a wide pan over medium and let the cumin seeds sizzle for 30 seconds.

  2. Add the onion, garlic, and ginger and cook until softened and golden, about 6 minutes.

  3. Stir in the turmeric, coriander, chili powder, and chopped tomato and cook until the tomato breaks down, about 5 minutes.

  4. Add the diced potatoes and cauliflower florets, season with salt, and toss to coat in the masala.

  5. Cover and cook on medium-low, stirring now and then, until the vegetables are tender and lightly browned, about 22 minutes.

  6. Stir in the garam masala, finish with cilantro, and serve hot with roti or rice.
