The quantities follow this count.
How to cook it
-
Soak the kidney beans in plenty of cold water overnight, then drain and rinse.
-
Heat the olive oil in a heavy pot over medium and brown the sliced sausage, then add the onion, celery, bell pepper, and garlic and cook 6 minutes.
-
Stir in the cajun seasoning, smoked paprika, bay leaves, and thyme, then add the beans and enough water to cover by 2 inches.
-
Bring to a boil, reduce to a low simmer, and cook until the beans are creamy, about 90 minutes, adding water as needed.
-
Mash some of the beans against the side of the pot to thicken, then season with the hot sauce and salt.
-
Meanwhile cook the rice separately, then spoon the beans over the rice and top with scallions.

When to cook it
Red Beans and Rice takes about 130 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at lunch and dinner. Nothing in the calendar rules it out, so it is a year round dish.
