How to cook it

  1. Soak the kidney beans in plenty of cold water overnight, then drain and rinse.

  2. Heat the olive oil in a heavy pot over medium and brown the sliced sausage, then add the onion, celery, bell pepper, and garlic and cook 6 minutes.

  3. Stir in the cajun seasoning, smoked paprika, bay leaves, and thyme, then add the beans and enough water to cover by 2 inches.

  4. Bring to a boil, reduce to a low simmer, and cook until the beans are creamy, about 90 minutes, adding water as needed.

  5. Mash some of the beans against the side of the pot to thicken, then season with the hot sauce and salt.

  6. Meanwhile cook the rice separately, then spoon the beans over the rice and top with scallions.
