How to cook it

  1. Heat the oven to 425F.

  2. Toss the chopped zucchini, bell pepper, red onion, and cherry tomatoes with 3 tbsp olive oil, the garlic, cumin, and salt.

  3. Spread them on a baking sheet and roast until tender and caramelized, about 25 minutes.

  4. Meanwhile bring 2 cups of water to a boil, stir in the couscous, cover, and remove from the heat for 5 minutes, then fluff it with a fork.

  5. Fold the roasted vegetables into the couscous with the remaining olive oil and lemon juice.

  6. Stir in the parsley and serve warm.
