How to cook it

  1. Pick over the urad, rinse it three times and soak it 6 to 8 hours or overnight.

  2. Pressure cook the drained urad with the water, turmeric and salt for 1 whistle on high, then 30 minutes on low, until the grains are soft and starting to burst.

  3. Mash the dal lightly with the back of a ladle so about a third of the grains break. That is what gives home maa ki dal its creamy body without any cream or butter.

  4. Heat the ghee in a pan, let the cumin seeds sizzle, add the chopped onion and cook 6 minutes until golden, then the ginger, chopped garlic and green chilies for 1 minute.

  5. Add the chopped tomatoes, red chili powder and coriander powder, cook 5 minutes until soft and jammy, then tip this tadka into the dal.

  6. Simmer the dal 10 minutes on low, stirring so it does not catch and adding a little hot water if it gets too thick. Finish with garam masala and cilantro.
