How to cook it

Pressure cook the mutton with the chana dal, sliced onion, ginger garlic paste, dried red chilies, peppercorns, cinnamon, cloves, cardamom, bay leaf, salt and water for 20 minutes, until both the meat and the dal are completely soft and most of the water has cooked away.

Pick out the cinnamon stick, cloves, cardamom pods and bay leaf and discard them, then let the mixture cool for 10 minutes.

Grind the meat and dal to a smooth, dry paste in a food processor, working in batches if it does not all fit. This paste, not chopped meat, is what lets a shami kabab hold together on the tawa.

Mix in the red chili powder, garam masala, chopped green chilies, coriander leaves and the beaten egg by hand, kneading until the mixture turns smooth and slightly sticky.

Divide into 10 to 12 portions and shape each into a flat, even patty about half an inch thick.

Heat the oil on a flat tawa or a wide pan over medium heat and fry the patties in batches, about 3 minutes a side, until a deep golden crust forms on both sides. Serve hot with sliced onion rings and a squeeze of lemon.
