How to cook it

Bring 3 cups water and the milk to a boil, whisk in the grits, and simmer, stirring often, until thick and creamy, about 20 minutes.

Stir the cheddar and 1 tbsp butter into the grits and keep warm.

Cook the chopped bacon in a skillet until crisp, then remove, leaving the drippings.

Toss the shrimp with the Cajun seasoning and cook in the bacon drippings with the garlic until pink, about 4 minutes.

Add the broth, remaining butter, and a squeeze of lemon and simmer into a light sauce.

Spoon the shrimp over the grits and top with the bacon and sliced green onions.
