How to cook it

  1. Bring 3 cups water and the milk to a boil, whisk in the grits, and simmer, stirring often, until thick and creamy, about 20 minutes.

  2. Stir the cheddar and 1 tbsp butter into the grits and keep warm.

  3. Cook the chopped bacon in a skillet until crisp, then remove, leaving the drippings.

  4. Toss the shrimp with the Cajun seasoning and cook in the bacon drippings with the garlic until pink, about 4 minutes.

  5. Add the broth, remaining butter, and a squeeze of lemon and simmer into a light sauce.

  6. Spoon the shrimp over the grits and top with the bacon and sliced green onions.

When to cook it

Shrimp and Grits takes about 40 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at dinner. Nothing in the calendar rules it out, so it is a year round dish.
