How to cook it

  1. Season the shrimp with salt and a little baharat and set aside.

  2. Heat the oil in a wide pot and cook the sliced onion until deep golden, about 8 minutes, since a well caramelized onion is what gives murabyan its color.

  3. Stir in the garlic, the remaining baharat, cumin and paprika and cook 1 minute, then add the tomato paste and cook 3 minutes until it darkens.

  4. Add the pierced dried limes, bay leaf and water, bring to a boil, then rinse the rice and stir it in. Cover, reduce the heat and cook 15 minutes until the rice is tender.

  5. Push the rice to one side, add the shrimp to the pot and cook 4 minutes until just pink and cooked through, then fold everything together gently so the shrimp do not break apart.

  6. Scatter with cilantro, serve with lemon wedges, the everyday Kuwaiti shrimp rice families cook on a weeknight.
