  1. Heat the oven to 450F and put a well-seasoned cast-iron skillet inside with the butter to heat until sizzling, about 10 minutes.

  2. Whisk the cornmeal, baking powder, baking soda, and salt together; there is no sugar in this batter, which is what separates it from a Northern-style cornbread.

  3. Whisk in the buttermilk and eggs just until combined.
