How to cook it

  1. Heat the oven to 350F and butter a baking dish.

  2. Boil the sweet potatoes in salted water until fork-tender, about 15 minutes, then drain and mash.

  3. Beat in 4 tbsp of the butter, 1/4 cup of the brown sugar, the eggs, milk, vanilla, and salt until smooth.

  4. Spread into the baking dish.

  5. Mix the remaining brown sugar and pecans with the remaining melted butter and scatter over the top.

  6. Bake until set and the topping is toasted, about 30 minutes.
