How to cook it

  1. Scrape the snake gourd, halve lengthwise, scoop out the soft seedy core, and finely dice.

  2. Heat the coconut oil in a pan, let the mustard seeds pop, then add the urad dal and chana dal and cook until golden.

  3. Add the dried red chilies and curry leaves and let them sizzle.

  4. Add the diced snake gourd, turmeric, and salt, toss well, cover, and cook on medium-low, stirring occasionally, until tender, about 12 minutes.

  5. Uncover, cook off any extra moisture, fold in the grated coconut, and cook 2 minutes more before serving.
