Soak the red beans in plenty of water overnight, then drain.

Heat the olive oil in a large pot and cook the onion, celery, bell pepper, and garlic until soft, about 7 minutes.

Stir in the Cajun seasoning, smoked paprika, and thyme, then add the beans, bay leaves, and broth.

Bring to a boil, then simmer, partly covered, until the beans are very tender, about 1.5 hours, mashing some against the pot to thicken.

Meanwhile cook the rice according to the package.

Season the beans with salt, discard the bay leaves, and serve over the rice topped with sliced green onions.
