How to cook it

  1. Soak the soya chunks in hot water for 10 minutes until plump, then squeeze them dry and set aside.

  2. Heat the oil in a pot and let the cumin sizzle, then cook the onions, garlic, and ginger until deep golden, about 9 minutes.

  3. Stir in the turmeric, coriander, and chili powder, then add the chopped tomatoes and cook until the oil separates, about 8 minutes.

  4. Add the soya chunks, salt, and two cups of water and simmer until the chunks are soft and have soaked up the gravy, about 15 minutes.

  5. Stir in the garam masala and cook 2 minutes more.

  6. Finish with cilantro and serve hot with roti or rice.
