How to cook it

  1. Soak the soya granules in hot water for 8 minutes, then drain and squeeze them dry.

  2. Heat the oil in a pan and let the cumin sizzle, then cook the onions, garlic, and ginger until golden, about 8 minutes.

  3. Stir in the turmeric, coriander, and chili powder, then add the chopped tomatoes and cook until jammy, about 8 minutes.

  4. Add the soya granules and peas, season with salt, and stir-fry over medium heat until dry and browned, about 8 minutes, adding splashes of water as needed.

  5. Stir in the garam masala and cook 2 minutes more.

  6. Finish with cilantro and serve hot with roti or pav.
