How to cook it

Dry roast the grated coconut over low heat, stirring constantly, until it turns a deep, dark brown, about 8 minutes; this longer, darker roast than a curry coconut is what makes a sukka a sukka.

In the same pan, roast the dried red chilies, coriander seeds, cumin seeds, peppercorns, cloves and cinnamon for 2 minutes until fragrant.

Cool and grind everything to a coarse, only just-wet paste; sukka masala is meant to be thick and grainy, not a smooth curry paste.

Heat the coconut oil in a heavy pot and fry the sliced onion until deep brown, about 10 minutes, then add the ginger garlic paste for a minute.

Add the mutton, turmeric and salt, and sear over high heat 10 minutes until well browned on all sides.

Add the water, cover and simmer 45 minutes, or pressure cook 20 minutes, until the mutton is tender and most of the liquid has cooked away.

Stir in the ground masala and cook uncovered over medium heat 10 minutes, stirring often, until the coconut paste turns dark and dry and clings to the meat with almost no gravy left. Finish with coriander leaves and serve hot.
