How to cook it

  1. Slash each piece of chicken a few times down to the bone so the marinade can penetrate.

  2. Whisk the yogurt, garlic, ginger, lemon juice, oil, all the spices, and salt into a thick marinade.

  3. Coat the chicken thoroughly and let it marinate at least 20 minutes, or up to overnight in the fridge.

  4. Heat the oven to 425F and arrange the chicken on a rack set over a foil-lined sheet pan.

  5. Roast until deeply colored and cooked to 175F at the bone, about 35 minutes, turning once.

  6. Finish under the broiler for 3 minutes for charred edges and serve hot.
