How to cook it

  1. Whisk the flour, eggs, and milk together with a pinch of salt to a smooth batter and let rest 20 minutes.

  2. Heat the oven to 425F and pour the oil into a roasting dish.

  3. Add the sausages to the dish and roast until beginning to brown, about 10 minutes.

  4. Pour the batter around the sausages and bake until well risen and golden, about 25 minutes, without opening the oven door.

  5. Meanwhile slice the onion and cook in a small pan until soft and golden, about 10 minutes, then stir in the beef stock and simmer to a gravy, about 5 minutes.

  6. Season the gravy with salt and pepper and serve the toad in the hole hot, with the onion gravy spooned over.
