How to cook it

  1. Heat the oven to 350F.

  2. Rub the turkey crown all over with 2 tablespoons of the butter and season with salt and pepper.

  3. Roast the turkey until cooked through, about 90 minutes, basting occasionally.

  4. Meanwhile score the ham fat in a diamond pattern, rub with the remaining butter and the brown sugar, and roast alongside the turkey for the last 40 minutes, until glazed.

  5. Rest both 15 minutes before carving and serving together.
