How to cook it

  1. Simmer the kombu and dried shiitake in 8 cups water for 15 minutes, then remove them and stir in the soy sauce and sugar for the broth.

  2. Whisk the flour, egg, and ice water into a lumpy tempura batter, keeping it cold.

  3. Heat the frying oil to 350F, dip the sliced sweet potato, zucchini, and green beans in the batter, and fry until pale gold and crisp, about 3 minutes, then drain and salt lightly.

  4. Boil the udon noodles until tender, then drain and divide among four deep bowls.

  5. Ladle the hot broth over the noodles.

  6. Top each bowl with the vegetable tempura and scallions and serve right away.
