How to cook it

  1. Whisk the flour, eggs, milk, and salt together to a smooth, thin batter and let rest 20 minutes.

  2. Heat the oven to 425F and pour a teaspoon of the oil into each cup of a muffin tin.

  3. Heat the tin in the oven until the oil is smoking hot, about 8 minutes.

  4. Working quickly, pour the batter evenly into the hot cups.

  5. Bake until well risen and deep golden, about 20 minutes, without opening the oven door.

  6. Serve hot, straight from the tin.
