How to cook it

  1. Peel and cube the potato and boil in salted water until fork tender, about 15 minutes, then drain and mash with half the butter and a splash of milk.

  2. Heat the oven to 400F.

  3. Place the white fish and smoked haddock in a wide pan, cover with the remaining milk, and poach gently until just cooked, about 6 minutes, then lift out, flake, and reserve the milk.

  4. Melt the remaining butter in a saucepan, whisk in the flour, and cook for a minute, then gradually whisk in the reserved poaching milk and simmer until thickened, about 5 minutes.

  5. Stir the flaked fish, peas, chopped hard-boiled eggs, and parsley into the sauce, and season with salt and pepper.

  6. Spoon into a baking dish, top with the mashed potato, scatter with cheddar, and bake until golden and bubbling, about 30 minutes.
