How to cook it
-
Boil the potatoes until just tender, about 3 whistles in a pressure cooker, then peel them and break them into bite size chunks.
-
Puree the tomatoes, or grate them on the coarse side of a box grater and throw away the skins.
-
Heat the oil in a pot, add the cumin seeds and asafoetida and let them sizzle for 30 seconds, then add the ginger and slit green chilies.
-
Add the tomato puree with the turmeric, coriander powder and red chili powder and cook 6 to 7 minutes over medium heat, stirring, until the oil shows at the edges.
-
Add the potatoes, salt and water, mash a few chunks into the gravy to give it body, and simmer 10 minutes. It should stay a thin, pourable curry, not a thick masala.
-
Stir in the garam masala and cilantro. This is the curry that goes with poori on a Sunday, and just as often with roti for a weekday lunch.
