How to cook it

  1. Wash the okra and dry every pod completely, then top and tail them and cut into thick fingers. Wet okra turns slimy and no amount of cooking undoes it.

  2. Fry the okra in half the oil over high heat for 6 minutes until the edges brown and it stops being sticky. Lift it out and set it aside.

  3. In the same pot heat the rest of the oil, fry the sliced onion until golden brown, add the ginger garlic paste for 1 minute, then the mutton and sear 6 minutes.

  4. Add the chopped tomato, turmeric, red chili powder, coriander powder and salt and bhunno 10 minutes until the oil separates, then add the water and cook covered 35 minutes until the meat is tender.

  5. Return the okra to the pot, fold it in gently, and cook uncovered 8 minutes so the gravy reduces around it without breaking the pods.

  6. Finish with garam masala, slit green chilies, coriander leaves and a squeeze of lemon. Serve with hot roti.
