How to cook it

  1. Wash the okra and dry every pod completely with a cloth, then trim and slice into thick rounds. Any water left on the pods makes the dish slimy.

  2. Heat the oil in a wide pan and fry the okra alone over high heat for 8 minutes without stirring too often, until the edges brown and the stickiness has cooked away. Lift it out.

  3. In the same pan fry the sliced onion until golden, about 6 minutes.

  4. Add the chopped tomato, turmeric, red chili powder, coriander powder, cumin and salt and cook 4 minutes until the oil separates.

  5. Return the okra, fold it in gently, and cook uncovered 6 minutes so it stays dry and separate.

  6. Finish with amchur, slit green chilies and coriander leaves. Serve as the second dish beside a daal or a salan.
