Heat the oil in a heavy pot and fry the sliced onion until golden brown, about 8 minutes, then add the ginger garlic paste and cook 1 minute.

Add the chicken and sear it 6 minutes over high heat until it is sealed on all sides and lightly coloured.

Whisk the yogurt smooth, lower the heat, and stir it in with the turmeric, red chili powder, coriander powder, cumin and salt so it does not split.

Add the chopped tomato and bhunno the masala 10 minutes over medium heat until the tomato disappears and the oil rises to the top.

Pour in the water, cover, and simmer 18 minutes until the chicken is tender and the shorba has thickened to coat a spoon.

Finish with garam masala, slit green chilies and coriander leaves. Serve with hot roti.
