How to cook it

Grate the onion and squeeze out as much liquid as you can in a clean kitchen towel; wet onion is why seekh kababs fall apart on the tawa.

Toast the besan in a dry pan for 2 minutes until it smells nutty, then let it cool completely.

Mix the chicken mince with the squeezed onion, ginger garlic paste, toasted besan, egg, red chili powder, coriander powder, cumin, garam masala, chopped green chilies, coriander leaves, mint and salt, kneading by hand for a couple of minutes until the mixture turns smooth and slightly sticky.

Cover and rest the mixture in the fridge for 20 minutes so it firms up enough to shape.

Wet your palms with a little oil and mould the mince around skewers into long, even cylinders, or simply shape into flat oval kababs if you are cooking on a tawa without skewers.

Heat a tawa or wide pan with the oil over medium heat and cook the kababs, turning every couple of minutes, for 10 to 12 minutes total until they are charred in spots and cooked through. If using the oven, grill on the top rack at 220C for 15 minutes, turning once. Serve hot with sliced onion and a squeeze of lemon.
