How to cook it

  1. Cut the fish into thick pieces, pat them completely dry, and rub them with half the lemon juice and salt. Leave 10 minutes, then pat dry again.

  2. Mix the besan, corn flour, ginger garlic paste, both chili powders, ajwain, turmeric, cumin and salt into a thick paste with a little water.

  3. Coat each piece of fish in the paste and leave it to sit 15 minutes so the coating grips.

  4. Heat the oil in a deep pan to a steady medium-high. Too cool and the coating drinks oil, too hot and it burns before the fish is done.

  5. Fry the fish in batches for 4 minutes a side until deep golden and crisp, then drain on paper.

  6. Dust with chaat masala, scatter the coriander leaves, and serve with the remaining lemon in wedges and hot naan.
