  1. Whisk 1 cup besan with the chopped onion, green chilies, a little salt, and enough water into a thick batter, then drop spoonfuls into hot oil and fry the pakoras until golden. Set them aside.

  2. Whisk the yogurt with 3/4 cup besan, turmeric, red chili powder, salt, and the water until smooth with no lumps.

  3. Heat 3 tbsp oil in a pot and let the cumin seeds, fenugreek seeds, hing, curry leaves, and dried red chilies sizzle.

  4. Pour in the yogurt mixture and bring it to a gentle boil, stirring constantly so it does not split, then simmer on low for 25 minutes until thickened.

  5. Slip in the fried pakoras, simmer for 5 more minutes, and serve.
