How to cook it

Place the smoked haddock in a wide pan, cover with the milk, and simmer gently until just cooked through, about 8 minutes, then lift out, flake the fish, and reserve the poaching milk.

Boil the eggs for 8 minutes, then cool, peel, and quarter.

Cook the diced onion in the butter until soft, about 5 minutes, then stir in the curry powder and cook for a minute.

Add the rice, stir to coat, then pour in the reserved poaching milk topped up with water to cover the rice by an inch.

Simmer, covered, until the rice is tender and the liquid is absorbed, about 15 minutes.

Fold in the flaked haddock and chopped parsley, season with salt and pepper, and top with the boiled egg quarters and a squeeze of lemon to serve.
