How to cook it

  1. Soak the lobia 4 to 6 hours, or overnight if you are cooking it for lunch, then drain it.

  2. Pressure cook it with the water and half the salt for 2 to 3 whistles, about 12 minutes. Lobia cooks far faster than rajma or chana and turns to mush if left, so release the pressure as soon as the time is up.

  3. Heat the oil in a pot, let the cumin seeds sizzle and cook the finely chopped onions 8 minutes until golden brown.

  4. Add the ginger garlic paste and slit green chilies for 1 minute, then the chopped tomatoes, turmeric, coriander powder, red chili powder and the rest of the salt, and cook 6 to 8 minutes until the oil separates.

  5. Add the lobia with its cooking water and simmer 10 minutes until the gravy thickens a little. Finish with garam masala and cilantro and eat it with rice or roti.
