How to cook it

  1. Season the shrimp with a little salt and set aside.

  2. Heat the ghee in a heavy pot and cook the sliced onion until soft and golden, about 6 minutes.

  3. Stir in the garlic and baharat and cook 1 minute, then add the chopped tomato and tomato paste and cook 3 minutes.

  4. Add the pierced dried limes, cardamom, cinnamon stick, bay leaf, water, and salt, and bring to a boil.

  5. Rinse the rice and stir it in, cover, reduce the heat to low, and cook 15 minutes until the rice is tender and the liquid is absorbed.

  6. Push the rice to one side, add the shrimp to the pot, and cook 4 minutes until just pink, then fold gently together.

  7. Scatter with the bloomed saffron, toasted almonds, and raisins, and bring the pot to the table so everyone serves from one platter.
