Wash the spinach thoroughly, chop it roughly and set it aside. It will collapse to a fraction of its volume.

Heat the oil in a pot, fry the sliced onion until golden brown, then add the ginger garlic paste and cook 1 minute.

Add the mutton and sear it 8 minutes over high heat, then add the chopped tomato, turmeric, red chili powder, coriander powder and salt and bhunno 10 minutes until the oil separates.

Pour in the water, cover, and cook 35 minutes under a low flame or 20 minutes under pressure until the meat is tender.

Pile the spinach on top, cover, and let it wilt for 5 minutes, then stir it through and cook uncovered 12 minutes until the greens darken and the water cooks away.

Finish with garam masala, julienned ginger and slit green chilies. Serve with hot roti.
