How to cook it

  1. Soak the dried red chilies in warm water for 15 minutes, then blend with the kashmiri chili powder, cumin seeds, peppercorns, cinnamon, cloves, ginger garlic paste and vinegar to a smooth paste.

  2. Coat the pork cubes in this paste, cover and marinate in the fridge at least 2 hours, or overnight for the best flavour; the vinegar is what gives vindaloo its sharp edge, so do not skip the wait.

  3. Heat the oil in a heavy pot and fry the sliced onion until golden, about 8 minutes.

  4. Add the marinated pork along with all its marinade, the turmeric and salt, and sear 8 minutes over high heat, turning the pieces so they take colour.

  5. Add the jaggery and water, bring to a boil, then cover and simmer on low heat for 40 minutes, or pressure cook 20 minutes, until the pork is tender.

  6. Uncover and simmer 5 minutes more to thicken the gravy to a clinging consistency. Serve hot with steamed rice or pav.
