Grate the onion and squeeze out every drop of its water in a clean cloth. Wet onion is the single reason seekh kebabs fall off the skewer.

Toast the besan in a dry pan for 2 minutes until it smells nutty, then let it cool.

Mix the mince with the squeezed onion, ginger garlic paste, toasted besan, egg, coarsely crushed coriander seeds, red chili powder, coriander powder, cumin, black pepper, salt, chopped green chilies, coriander leaves and mint.

Knead the mixture hard for 4 minutes until it turns sticky and holds together, then chill it 20 minutes.

Press the mixture along skewers in a long even sausage, or shape it into thick fingers if you have no skewers.

Cook on a hot oiled griddle or under a hot grill for 12 minutes, turning, until charred outside and just cooked through, then sprinkle the garam masala over and serve with hot naan and raita.
