How to cook it

  1. Rinse the basmati rice and soak it for 20 minutes, then drain.

  2. Heat the oil in a pot and let the cumin seeds and whole spices sizzle, then cook the onion, ginger-garlic paste, and green chilies until soft.

  3. Stir in the turmeric, coriander, red chili powder, and garam masala, then add the potato, cauliflower, carrot, and peas and cook for 5 minutes.

  4. Add the drained rice, water, and salt and bring to a boil, then cover and cook on low until the rice is tender, about 18 minutes.

  5. Rest for 5 minutes, fluff gently, and serve.
