Soak the basmati rice for 20 minutes, then boil it with the whole spices and salt until it is 70 percent cooked and drain it.

Fry the sliced onions in the oil until deep golden and crisp, then set half aside for layering.

To the remaining onions add the ginger-garlic paste, green chilies, yogurt, biryani masala, and turmeric, then stir in the vegetables and cashews and cook for 8 minutes.

Layer the par-cooked rice over the vegetables, scatter the reserved fried onions, mint, and cilantro on top, and drizzle over a little water.

Cover tightly and cook on the lowest heat for 20 minutes, then rest 5 minutes before gently fluffing and serving.
