Print or share this recipe
Aloo Methi (Potatoes with Fresh Fenugreek) is North Indian home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre and the cooked vegetable. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.

How to cook it
-
Pluck the methi leaves off their stems, wash them in two changes of water to float off the grit, drain them and chop them roughly.
-
Peel the potatoes and cut them into small cubes, about half an inch, so they cook through in the pan without boiling.
-
Heat the oil in a kadai, add the cumin seeds, and when they sizzle add the chopped garlic and green chili and cook until the garlic turns pale gold.
-
Add the potatoes with the turmeric, stir to coat, cover and cook on low heat 10 to 12 minutes, stirring now and then, until a knife slides in easily.
-
Add the methi, red chili powder, coriander powder and salt and cook uncovered 6 to 8 minutes, stirring, until the leaves wilt right down and the pan is dry.
-
Sprinkle the amchur over, toss and take it off the heat. The gentle bitterness of the methi is the point of the dish. Eat it with roti and dal.

When to cook it
Aloo Methi (Potatoes with Fresh Fenugreek) takes about 35 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at lunch and dinner. It is at its best in winter, which is when what goes into it is worth buying.
