How to cook it

  1. Crush the coriander seeds, peppercorns and cumin seeds coarsely in a mortar. A karahi is built on cracked whole spice, not powder.

  2. Heat the oil in a wide karahi or wok until it shimmers, add the chicken and the ginger garlic paste, and fry hard over high heat for 10 minutes until the pieces are browned and their liquid has gone.

  3. Add the quartered tomatoes and salt, cover, and cook 8 minutes until the skins slip off. Fish out the loose skins.

  4. Uncover, raise the heat and bhunno 8 minutes, pressing the tomatoes down, until the water cooks off and the oil pools bright at the edges.

  5. Stir in the yogurt, crushed spices and red chili powder and cook 4 minutes more until the masala clings to the chicken rather than pooling under it.

  6. Throw in the julienned ginger, slit green chilies, crushed fenugreek leaves, garam masala and coriander leaves, squeeze the lemon over, and serve straight from the pan with hot naan.
