How to cook it

  1. Tie the coriander seeds, peppercorns, fennel seeds, star anise, half the cloves and half the cardamom in a piece of muslin to make the yakhni bundle.

  2. Simmer the chicken with the water, the spice bundle, half the onion and the salt for 25 minutes. Lift the chicken out and strain the stock: you need exactly 4 cups, so top it up or boil it down.

  3. Rinse the rice until the water runs clear and soak it 30 minutes, then drain.

  4. Heat the ghee, fry the remaining sliced onion until golden, add the ginger garlic paste, the rest of the whole spices and the cumin, then return the chicken and sear 5 minutes.

  5. Stir in the whisked yogurt and cook 3 minutes, then add the drained rice and fold once, gently, so the grains do not break.

  6. Pour in the 4 cups of hot yakhni, taste for salt, and boil uncovered until the liquid is level with the rice. Add the slit green chilies, cover tightly, and steam on the lowest heat 15 minutes. Rest 10 minutes before opening.
