How to cook it

  1. Boil the rinsed rice in plenty of salted water for 8 minutes until just done, drain it, and spread it on a tray to cool and dry. Warm rice turns to paste in the pan.

  2. Cut the chicken into small strips and toss them with the cornstarch, half the black pepper and a pinch of salt.

  3. Heat half the oil in a wok until it smokes, fry the chicken 5 minutes until browned, and lift it out.

  4. Add the rest of the oil, scramble the beaten eggs quickly and push them to the side, then fry the chopped garlic, julienned carrot, shredded cabbage and sliced pepper over the highest heat for 3 minutes. The vegetables should stay crunchy.

  5. Return the chicken, add the cold rice and toss everything hard for 3 minutes, then season with the ketchup, vinegar, remaining black pepper and salt.

  6. Fold through the sliced spring onions and chopped green chilies and take it off the heat immediately. This is the home version, built on ketchup and vinegar rather than a restaurant's soy bottle.
