How to cook it

  1. Rinse the beef liver slices and pat them dry, trimming away any tough membrane.

  2. Heat the oil in a wide pan and fry the sliced onion until deep golden, about 8 minutes, then add the ginger garlic paste for 1 minute.

  3. Add the chopped tomato, red chili powder, turmeric, coriander powder and cumin, and bhunno 8 minutes until the tomato collapses and the oil separates.

  4. Cut the liver into thin strips, add them to the masala, and turn the heat up, stirring often so the liver sears rather than stews, about 8 minutes until just cooked through and still tender.

  5. Do not let it go past this point, since beef liver turns firm and grainy if it sits on the heat too long.

  6. Finish with garam masala, julienned ginger, slit green chilies and coriander leaves. Serve hot with roti.
