How to cook it

Make a soft dough with the atta, salt and water, knead it 8 minutes, and rest it 20 minutes.

Fry the finely chopped onion in a spoonful of the ghee, add the ginger garlic paste, then the mince, and break it up hard as it browns.

Add the red chili powder, coriander powder, cumin and salt and cook 10 minutes until the keema is completely dry. A wet filling tears the paratha every time.

Stir in the garam masala, chopped green chilies and coriander leaves and let the filling cool completely.

Roll two thin rounds of dough, spread the filling over one leaving a clear border, lay the second on top, and press the edges together firmly.

Cook on a hot tawa 2 minutes a side with plenty of ghee until deep golden and crisp. Cut into wedges and serve with plain yogurt and chai.
