How to cook it

  1. Soak the black-eyed peas 4 hours, drain, then boil them in the water with salt for 25 minutes until tender. Keep the cooking liquid.

  2. Heat the oil in a pot and fry the sliced onion until golden brown, about 8 minutes, then add the ginger garlic paste and cook 1 minute.

  3. Add the chopped tomato with the turmeric, red chili powder, coriander powder and cumin and bhunno 8 minutes until the tomato collapses and the oil rises to the surface.

  4. Add the drained peas and stir them through the masala for 3 minutes so they take the colour.

  5. Pour in a cup and a half of the reserved cooking liquid and simmer 10 minutes until the gravy thickens to a spoonable shorba.

  6. Finish with garam masala, slit green chilies and coriander leaves. Serve with hot roti.
