Rinse both lentils together and simmer them with the water, turmeric and salt for 20 minutes until soft but not completely broken down.

Mash about a third of the daal against the side of the pot so it thickens while the rest keeps some texture.

Heat the ghee in a small pan, fry the chopped onion until golden, then add the ginger, garlic and green chilies for 40 seconds.

Stir in the chopped tomato, red chili powder and coriander powder and cook 4 minutes until the tomato breaks down and the fat pools at the edge.

Tip the tarka into the daal, stir, and simmer 3 minutes so the two settle together.

Scatter the coriander leaves over the top. Serve with hot roti.
