How to cook it

  1. Soak the chickpeas overnight, then boil them in the water with salt for 40 minutes, or pressure cook 15 minutes, until tender. Keep the liquid.

  2. Heat the oil, fry the sliced onion until deep golden, then add the ginger garlic paste and cook 1 minute.

  3. Add the chicken and sear 6 minutes, then lower the heat and stir in the whisked yogurt with the turmeric, red chili powder, coriander powder, cumin and salt.

  4. Add the chopped tomato and bhunno 10 minutes until the masala tightens and the oil separates.

  5. Add the drained chickpeas and two cups of their cooking liquid, cover, and simmer 15 minutes until the chicken is tender and the gravy has body.

  6. Finish with garam masala, chaat masala, slit green chilies and coriander leaves. Serve with hot naan.
