How to cook it

Crush the coriander seeds, peppercorns and cumin coarsely in a mortar and set them aside.

Heat the oil in a wide karahi, add the mutton and ginger garlic paste, and fry hard for 12 minutes until the meat is browned all over and the liquid it threw off has gone.

Add the quartered tomatoes and salt, cover, and cook 25 minutes on a low flame, stirring now and then, until the meat is tender. Add a splash of water only if the pan runs dry.

Lift out the loose tomato skins, raise the heat, and bhunno 10 minutes until the water cooks off and the oil pools bright red at the edges.

Add the red chili powder and crushed spices and fry 3 minutes more so the masala clings to the meat.

Throw in the julienned ginger, slit green chilies, crushed fenugreek leaves, garam masala and coriander leaves, squeeze the lemon over, and serve from the pan with hot naan.
