Palak Chicken (Chicken in Spinach Gravy) is North Indian home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.

How to cook it
-
Wash the spinach well, drop it into boiling water for 2 minutes, then straight into cold water so it keeps its green. Squeeze it lightly and blend it with the green chilies into a coarse puree.
-
Heat the oil in a heavy pot and fry the finely chopped onions until golden brown, about 10 minutes, then add the ginger garlic paste and stir for a minute.
-
Add the chicken, which a Delhi shop cuts skinless, and sear it on high heat for 5 minutes. Add the chopped tomatoes, turmeric, red chili powder, coriander powder and salt and keep stirring for about 8 minutes, until the tomatoes break down and the masala clings to the pieces.
-
Pour in the water, cover and cook on low heat for 15 minutes, until the chicken is nearly tender. In a pressure cooker, 2 whistles is enough.
-
Stir in the spinach puree and simmer uncovered for 5 minutes, just until it thickens and coats the chicken. Any longer and the green turns dull.
-
Crush the kasuri methi over the pot, stir in the garam masala and serve with hot rotis. The home version has no cream; that is a restaurant habit.

When to cook it
Palak Chicken (Chicken in Spinach Gravy) takes about 50 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at lunch and dinner. Nothing in the calendar rules it out, so it is a year round dish.
